Ingredients
  • 3 lb 93/7 ground turkey

  • Taco seasoning of choice

  • 3 sweet potatoes, cut into cubes

  • Olive oil spray

  • Salt

  • Grilled bell peppers

  • Grilled onions

  • Avocado

  • Desired toppings (cheese, cilantro, sour cream etc.)

Preparation

Instructions
  1. Brown the ground turkey in a skillet over medium heat.

  2. Add taco seasoning to the browned turkey and mix well.

  3. Preheat the oven to 375°F (190°C).

  4. Spread the sweet potatoes on a baking sheet, spray with olive or avocado oil, and bake for 20 minutes. Flip and continue baking for an additional 20 minutes, or until they reach your desired level of roasting.

  5. While the sweet potatoes are baking, grill the bell peppers and onions until tender.

  6. Assemble the bowl: add 1/2 cup to 1 cup of roasted sweet potatoes, top with 4-6 oz of taco meat


Top with desired toppings:

grilled bell peppers, onions, cilantro, sliced avocado or guacamole, cheese, sour cream.
